CATALINA PARRA CONCESSIONS SUPERVISOR In the senior capacity of Supervisor at RICKY AREPAS since 2010, Catalina Parra has overseen concessions site operations for the firm's contract with Miami -Dade County's Crandon Park Beach, the City of Doral, and our temporary contract at GRAPELAND WATER PARK. She supports employees by ensuring that the stage is set for superior food and beverage sales and customer service and all our concessions activities. JACKSON SALAZAR OPERATIONS MANAGER For the past several years, Jackson Salazar has been integrally involved as a Concessions Manager for the company at Miami -Dade County's Rickenbacker Causeway concessions and other venues. From this consistent, day-to-day experience he has gained valuable insight into the needs and preferences of patrons. He is focused on meeting allrequirements necessary to help deliver a positive experience to park visitors by ensuring that food, beverages, and customer services are first-rate. He is also responsible for managing the concession employees and the cashier function for the parks. ALBERTO CAMEJO BOOKKEEPER/CONTROLLER Alberto Camejo has served as Bookkeeper/Controller at RICKY AREPAS for four years, providing accurate and timely accounting reports to the firm's clients. 14 RICKY AREPAS AND HOT DOGS, INC. PROPOSED APPROACH TO PROVIDING THE SERVICES 11. PROJECT ORGANIZATION AND MANAGEMENT RICKY AREPAS has in place a well -coordinated team of Supervisors, Concessions Employees and support staff extensively experienced in food and beverage concessions sales and management. They have worked together on similar contracts for many years and have experience working with government clients, including Miami -Dade County and the CITY OF MIAMI. Ricardo de la Hoz, President and Owner, is in charge of the firm's operations. Supervisors for this contract, Mirna Zambrano and Jackson Salazar, oversee and support the operation of all project sites and are in charge of Concessions Employees. The majority of the firm's Supervisors and Concessions Employees have been with the firm for many years, and thus are knowledgeable about concessions sales and management and provide our clients with efficient, reliable, courteous service. At GRAPELAND WATER PARK, Ricardo de la Hoz and Mirna Zambrano, both State of Florida Certified Food Safety Managers (certificates attached) are hands-on in the park each day to provide additional support to personnel. A substantial number of qualified personnel are available at all times to fill in, support, or back up our Supervisor, Concessions Manager, or Concessions Employee positions. Similarly we have twenty on -call employees who are experienced in working with our firm. These individuals are also available to staff special events. 12. ENSURING SAFETY, SERVICE, AND CUSTOMER SATISFACTION RICKY AREPAS offers a wide array of hot and cold, national brand food and beverage items for all occasions and groups of all sizes. Our food and beverages are fresh; hot foods are served hot and cold foods are refreshingly cold. All of our food and beverage items are prepared and served to the highest hygienic standards, and presented in an appetizing manner, with a positive attitude and focus on superior customer service. Since 1985, Ricardo de la Hoz has been the owner of his office/commissary facility located near State Road 836 (Dolphin Expressway) and 1-95. This facility 15 RICKY AREPAS AND HOT DOGS, INC. is equipped with security cameras and appropriate gates and locks to protect assets. Its convenient physical location enhances quick access to GRAPELAND WATER PARK and all CITY OF MIAMI facilities and government offices,to other related South Florida areas. Our facility's central location provides easy access to the commissary for suppliers of product and equipment. RICKY AREPAS is financially sound and stable and has sufficient working capital and resources to support the requirements of this contract. RICKY AREPAS also has the required permits, licensing and business insurance coverage in place. RICKY AREPAS has in place a Drug -Free Workplace Policy and a Business Code of Ethics. These are posted at our commissary, and we adhere to affirmative action policies in relation to employees, and fair subcontracting policies in relation to vendors. Because of our considerable number of years providing concessions services, we possess the necessary knowledge of, and are mindful of,the legal requirements involved in this type of operation. RICKY AREPAS complies with all health and sanitation requirements, regulations and laws. RICKY AREPAS offers an exceptional combination of experience, commitment, resources and understanding of the concessions business. Coupled with our strong background in food and beverage concessions, we are ideally equipped to meet and exceed your requirements for serving your, and our, customers -- the public. 13. FACILITY EFFECTIVENESS AND MAINTENANCE Each morning our Supervisors check our products in stock, staffing, commissary equipment, concessions, mobile and fixed units, and company vehicles to ensure they meet our company standards. On the same scheduled regimen, we do preventive maintenance on equipment, and monitor'calibrations while keeping in mind the appearance of our equipment and personnel. Our employees continually check our mobile and fixed unit locations to ensure quality in product, supplies, equipment operation, food handling, customer service, area cleanliness and overall operations. They take all necessary actions to see that proper maintenance is handled. Our opening and closure procedures for each day are carried out in a consistent and timely manner. Additionally, our employees are trained to handle basic equipment repairs, resolve complaints, and handle emergencies. Senior leadership Ricardo de la Hoz and Mirna Zambrano serve as further back up should any of the above -mentioned situations escalate and require their attention. 16 RICKY AREPAS AND HOT DOGS, INC. In addition, RICKY AREPAS has business insurance coverage in place, and at contract negotiations will provide documentation indicating that its coverage meets CITY OF MIAMI requirements, and that the CITY OF MIAMI will be noted as additionally insured. 14. RESPONSIBILITIES, PROCEDURES AND STANDARDS RICKY AREPAS has assembled a team exceptionally experienced in the concessions industry. They have efficiently worked together for years, serving local government and private venues as their clients. Over the years RICKY AREPAS has been continually refining its management systems to enhance produce and quality while keeping efficiency as a primary focus. Mirna Zambrano, Supervisor, will be responsible for coordinating the day-to-day operation. She has been serving in senior roles with RICKY AREPAS for several years, and is fully experienced in concessions sales and management. Ricardo de la Hoz is in communication with the Supervisors throughout each day and will provide additional support to the personnel in those positions. Mirna Zambrano and Jackson Salazar oversee and support the Concessions Employees who are also charged with the efficient day-to-day operation of the concessions at your sites. We have a substantial number of personnel available at all times to fill, support or back-up our Supervisor or Concessions Employee positions, and a sizable number of on -call employees who are experienced working with our firm are available to staff special events. 15. EMPLOYEE MANUAL AND TRAINING PROCEDURES The following is a list of guidelines and procedures to be followed when working with RICKY AREPAS at GRAPELAND WATER PARK. If employees have questions, they are directed to ask Senior Management. HOURS OF OPERATION. Fixed unit and all carts should be in place and ready to serve by 10:00 a.m. No venue or card should close until 4:30 p.m. These times may vary during special events. UNIFORMS. • Wear clean RICKY AREPAS shirt and uniform hat. 17 RICKY AREPAS AND HOT DOGS, INC. • Above -the -knee shorts (khaki, navy blue, white or black). No jeans, bike shorts or cut-offs. • Closed -toe shoes, preferably sneakers with socks. No open -toe shoes or flip -fops. SET UP AND PUSH OUT • Check that cart is in good condition. Use rubber stoppers in drain hole before loading card with dry ice or frozen lemonade. • Make sure you have all supplies before you leave the commissary. Serving spoons, agitators, cups, umbrellas, menu boards, price signs, water bucket, wet wipes, starting banks and belts. (Count sleeves to verify: 12 oz-100, 16 oz-50.) • Only one person at a time should leave the commissary with their cart. Location staff should leave at five-minute intervals. PUSHING CARTS AROUND PARKSA/ENUES • Use service roads whenever possible. Use walks and paths when going directly to your location. When you arrive at the selling locations, make sure wheels are in locked position. • When pushing carts, stay to the left of the road. Stay out of the middle of the road and be mindful of traffic. TRAINING In order to adhere to the standards set by the law, RICKY AREPAS follows these five fundamentals for safe, sanitary food service. Although good sanitation includes other details, if any one of these five basics is missing, the prevention of food contamination is significantly jeopardized. 1. Clean hands: Dirty hands spread germs. Hands and fingernails should be washed thoroughly with soap and water before work, after using the toilet, and every time they are soiled or become contaminated. 2. Clean service: Single service items handled carefully to keep them sanitary. Other utensils should be washed clean, sanitized as recommended by the health authority, then carefully stored and handled. 3. Clean food: Food may be infected by coughs, sneezes, handling, dirty equipment, vermin, animals, and wastes. It should be protected during storage, preparation, and service. 4. Right temperature: Cold temperatures slow or stop the growth of germs; heat kills them. Cold foods should be kept cold; hot foods should be kept 18 RICKY AREPAS AND HOT DOGS, INC. hot. Prepared foods should never be left standing at room temperature except during necessary periods of preparation and service. 5. Healthy personnel: Food service personnel must be healthy to prevent colds and other diseases from being passed to others. Germs from infected cuts, pimples, or boils can contaminate food. Under direct training by Ricardo de la Hoz, who holds a Florida Food Manager Certificate issued by the State of Florida, plant/commissary, management, supervisory and concessions employees receive an in-house National/Florida Restaurant Association Food Handler Certificate [training] Program upon the start of their employment. Topics covered are sanitation and food handling, general safety, food appearance/presentation, employee hygiene and appearance, cash handling, ethics, customer service, complaint resolution, instant communications, emergency procedures, anti -litter efforts, Drug -Free Workplace policy, affirmative action policies, code of business ethics and professional demeanor. New employees receive intense on-the-job training for three days, and new and existing employees are updated on an ongoing basis on the above -listed topics. They are assembled quarterly to ensure that their operations are meeting RICKY AREPAS' and our clients' requirements. 16. APPROACH TO FOOD PREPARATION & DISPLAY We propose operating attractive fixed and mobile units at GRAPELAND WATER PARK to provide appetizing food and refreshing beverages to park patrons. All our equipment meets the requirements of all applicable government regulations. Every day the fixed concession and our mobile units will be set-up and removed from the premises on a timely basis. Photos of our mobile units and a fixed venue are enclosed with this proposal. We use national name brand foods, featuring "100% beef" hot dogs and sausage, and our food is always fresh. RICKY AREPAS will be responsible for all operating expenses, supplies, and utensils associated with the day-to-day operations of the designated concessionsspace. All signage is self-contained and clearly identifies our firm name. 19 RICKY AREPAS AND HOT DOGS, INC. RICKY AREPAS' approach for this contract entails an emphasis on the following: • a high level of product freshness and quality, • exceptional customer service, • aesthetically attractive and fully functional equipment, • debris -free concessions areas, • food handling safety, • employee knowledge and training, • continuous, reliable service, • no interference with typical public use of GRAPELAND WATER PARK, • maximizing sales and generating revenues by offering a variety of complementary foods and beverages, • instant communications with our employees and staff of CITY OF MIAMI and any other governmental agencies, and • reporting gross sales, and making rental payments, to CITY OF MIAMI monthly. We periodically survey our customers for comments about our food and beverage quality and pricing and our level of service, and make adjustments as necessary to further accommodate the needs and desires of the park patrons. RICKY AREPAS will comply with the requirements noted in this solicitation, and we understand that all elements of our plan are subject to advance approval by the CITY OF MIAMI. 17. MEASURES TO INSURE UNINTERRUPTED SERVICE AN.D COMPLIANCE WITH HEALTH DEPARTMENT We keep all equipment and concession areas in clean, sanitary and orderly conditions at all times. RICKY AREPASmaintainsTruly Nolen pest extermination service under contract for its office/commissary and all mobile and fixed food and beverage units. Each morning our Supervisors check our products, staffing, commissary equipment, concessionsmobile and fixed units and equipment, and company vehicles to ensure they meet our high company standards. On the same regimented schedule, we do preventive maintenance on equipment, we monitor equipment calibrations and we check the appearance and appropriateness of our equipment and personnel. Our Concessions Employeescontinuously check our mobile and fixed unit locations to ensure quality in product, supplies, equipment operation, food 20 RICKY AREPAS AND HOT DOGS, INC. handling, customer service, area cleanliness and overall operations. Our initiation of work and completion of work each day will be carried out in a timely manner. Concessions Employees are trained and poised to handle any equipment repairs, complaints or emergencies, and senior staff Ricardo de la Hoz and Mirna Zambrano are always available to assist and provide immediate back-up. 18.ABILITY TO BEGIN FULL OPERATIONS IMMEDIATELY RICKY AREPAS is currently one of the interim food service providers in GRAPELAND WATER PARK. We have all product, suppliers, equipment, personnel, permits, and licenses in place and have provided full service to park visitors. We have received consistently positive feedback from park staff and customers, and are ready to begin work on this contract immediately. We welcome the opportunity to continue our successful service without interruption, and through the ending date of this contract. 19. EQUIPMENT AT FIXED ANDMOBILE UNITS RICKY AREPAS specializes in providing mobile and fixed food and beverage concessions service with fully self-contained equipment and related supplies necessary to operate functional mobile and fixed unit operations. RICKY AREPAS is well-informed about, and complies with,'jurisdictional laws, rules and regulations that apply to our installations and mobile and fixed units. Mobile Units RICKY AREPAS will provide two or moreattractive mobile food and beverage units at GRAPELAND WATERPARK, with fully self-contained equipment and utilities. These units servea variety of appetizing food and beverage to accommodate customers' requirements and preferences.
