Johnson & Wales University Johnson & Wales University is a world -class university, where students have an opportunity to pursue a career education in business, hospitality, culinary arts, or technology. Scores of majors and degree programs are offered at the undergraduate, graduate and doctoral level. Johnson & Wales' four campuses are located in Providence, Rhode Island; North Miami, Florida; Denver, Colorado; and Charlotte, North Carolina. The special approaches to career education at Johnson & Wales University have evolved over more than 90 years and continue to change as Johnson & Wales responds to the changing needs of business, industry, and its students. Johnson & Wales University was founded as a business school in 1914 in Providence, Rhode Island by Gertrude I. Johnson and Mary T. Wales. From its origins as a school devoted to business education, Johnson & Wales grew first to a junior college, then to a senior college, and ultimately to university status. The University became well established because of its strong commitment to specialized business education and the high ideals of its founders. In 1993, Johnson & Wales and its unique approach to career education received regional accreditation from the New England Association of Schools and Colleges. Professional Training Professional training at the North Miami Campus has worked with many local and international companies and organizations to meet their individualized training needs. From hospitality and customer service through to management development and personal development our success has come from word of mouth recommendations based on the satisfaction of our clients which include most major cruise lines, many resorts and international hotel associations. 2 of 3 • • • Objectives: To have a representative from Johnson & Wales University visit the restaurants that will be receiving the training, at which time a needs assessment and site inspection will be completed. To deliver a training program based on the findings in the needs assessment and site inspection. A gap analysis will determine the courses and content that will be used in the training. These topics may include, but are not limited to the following: • Reviewing Menus • Understanding the restaurant industry from an International perspective • Understanding customer expectations in the new millennium • Understanding and utilizing moments of truth • Benefits of rewarding employees • How to develop pride in giving service • Customer relations and satisfaction • Techniques of American service • Correct table setting standards • Napkin folding • Food sanitation and safety • Hazard analysis and critical control points systems • Techniques of upselling • Distinctions between dining and eating • Plate presentation • Understanding customer service • Kitchen organization, planning and control • How to prioritize restaurant functions Location of the Training: Classes will be held at a location to be determined in Overtown. Duration of the Training: The Training sessions would initially be 2.5 hours, twice a week for the first four weeks. The training would continue at 2.5 hours a month for the next 11 months Investment: A class of 10 —12 participants, to include content specific delivery, workbook, classroom, and administrative/development cost, certificate of completion and a small graduation ceremony $25,000. 3 of 3
