Jacobs has appeared on CBS, PBS, and WSVN-TV's "Deco Drive." Most recently Chef Jacobs collaborated with High Noon Entertainment and the Food Network on (3) shows in the current highly rated Food Network Challenge series. He participated in a proposed cooking show for children entitled "X Out Junk Food," and has taught classes on healthy cooking to young children and adolescents at a local community center. As recognition of his impact on the New York and South Florida restaurant scenes, Chef Jacobs has been featured in the The New York Times, New York Magaiine, New York Post, Nation's Restaurant News, USA Today, The Miami Herald, El Nuevo Herald, the Sun Sentinel, City Illuminated, and Ocean Drive Magaiine. In 1998, he was voted "Rising Star Chef" by Restaurant Hospitality Magaiine. When not working on television projects, Chef Jacobs is the executive chef and hospitality director of Ferrell Law, a Miami based law firm. In this coveted position, he prepares meals and arranges events ranging from private luncheons to elaborate receptions and dinners. Since joining the firm in 1999, Chef Jacobs has introduced hundreds of the firm's influential clients to his culinary innovations that combine the best of Mediterranean and Asian influences. Chef Jacobs brought his unique style to the firm four years after starting MediterAsiasM Consulting, Inc., which he still owns and operates. He first developed his global -style cuisine in New York with the opening of Red Restaurant/Chaise Lounge. In 1997, he found an outlet for his unique creations as the founding and Executive Chef of South Miami Beach's Hip and Trendy Tantra Restaurant and Lounge. His aphrodisiac -inspired menu made Tantra one of the hottest night spots in South Beach and still is today. Before that, Chef Jacobs worked with some of the world's culinary masters, including Desi Szonntagh, formerly of Tatou Beverley Hills, and Terrence Brennan of Picholine in Manhattan. He has also worked at Gaughin in New York's Plaza Hotel, Auberge du Pont Rouge in Le Mans, France, La Gavroche London, England and many various places throughout the world. We are looking forward to the community meeting in September to meet our new neighbors as well as to answer any questions. Construction on the indoor expansion will begin soon and we feel that our combination of aesthetics and comfort will be another positive addition to the design district. We have used a local architect, Tom Telesco Inc., as well as multiple designers to translate our concept for fine dining to a Miami vernacular. We intend to be open six nights a week for lunch and dinner as well as three nights a week as a lounge. The combination of indoor and outdoor dining as well as the upgrades to the property are being planned to solve the previous noise complaints. Sound attenuation tests were done recently and those results are allowing us to develop a sound system for the exterior that will keep the sound within lawful limits. The interior space will also be upgraded to combat sound through specialized ceiling material and wall padding. A sound dampening system is being installed in the doorways between the enclosed and open parts of the restaurant to inhibit sound traveling out when the door opens for normal traffic. With the addition of the indoor venue, we re confident that Grass Restaurant will be able to provide our patrons with desirable ambient sound levels at no one's expense. Furthermore the existing upgraded exterior will instead provide a more tranquil atmosphere- a noticeable difference from the past. As you can guess the previous ownership did not convey to us the severity of any noise issues when we were in the process of sale. However, since our team has been in place, proactive measure have been taken to assess and solve these past and foreseeable problems. We have met directly with some of the neighbors that were most affected in order to provide immediate solutions and hear their concerns. One of our concerns that we wanted to address was in relation to misplaced blame. One of the neighbors has been extremely vocal about the noise was involved with the previously issued citation (old ownership). Since our initial contact he has been a gentleman, he has been helpful and he has informed us of the history of the complaint. He also participated in the sound attenuation measurements. At any rate, he assured me that he never made any mistakes and the sound was always coming from Grass Restaurant. We politely disagreed because we have received complaints several times when we were CLOSED. A direct line was given to him as well as some other neighbors in the immediate area. He contacted us on Friday the fourth of August to tell us that the sound was bothersome enough to call us and complain. Grass restaurant has been closed since July 15th for construction preparation. We are not writing this to minimize any of the previous complaints, rather this is part of the process for us to properly address what is causing the excessive noise. And this is not to say that we are not responsible for previous problems, but merely to show that some of the previous complaints were misdirected. Regardless of the past we are anxiously looking forward to the future. A future where the design district as well as the surrounding area become a cohesive mix of residential and commercial properties that provide comfort to the customers of local businesses as well as to the local residents. Low level, ambient music is also fine but we need to agree on the wattage and number of the exterior speakers. There is an empty parking lot on the corner of 42st and N.Miami that might work. During the day its utilized by Majestic Realty but at night its vacant. I haven't spoken to Wendy about this but I don't think the east -side has a parking issue. But, I could be wrong. All in all, I think the meeting went very well. There will be a general discussion of how the new Board will be seated and plans for the new year. 4. We will have a review of the Halloween event. It has been suggested to make this an annual event. We need to decide if this is something we want because we need to plan several months in advance in cooperation with the Commissioner's office to do this right.
