Hello Yusbel,
was very happy to open my emails this morning to find your letter regarding a
possible award to us of the Snack Program, All of our employees that previously
served your centers are constantly asking if that work will ever return, so they will be
very happy to hear the news.
left you a voice mail this morning regarding our perspective on our return, In a
nutshell, there are foods on the Tallahassee Snack menu (a menu that is designed
for bulk food service) that are not readily available in prepackaged form, Therefore,
we have to individually package those foods manually which is costly which is why
we originally had to bid $0,88, If we can have a little flexibility on sending some the
foods bulk packaged with plastic/paper products for their consumption (ex. loaves of
bread instead of individually bagged slices, raw vegetables in a pan instead of
individual containers, bean salad in a pan instead of individual containers, floured
soft tortilla in a pan instead of individually wrapped, fruits in pans instead of
individual cups, etc,), we will be able to comply with the menu as stated and meet
the budget of operating at a price of $0.74 per snack. Possibly if I could also speak
with the program director, they might be able to determine whether these packaging
changes were of a concern or not.
The other option that would be workable at $0.74 per meal is if we were to use the
snack menu that we served during your recent summer lunch program. That menu is
conducive to individualization and therefore could meet the budget constraint.
