The food observed by the inspector did not require labeling because
it had just been cooked and was being cooled down in the
refrigerator for packing within three hours; once packed it was
properly labeled.
One of several spare test kits that were stored for safe keeping was
immediately placed in the area of the washroom sink.
The affected area was ground down and refinished; a replacement
bin will be sought prior to the reappearance of the rust.
The dirty plastic bucket was eliminated and a new storage container
was purchased and put into service to replace the bucket.
A plastic quart container was being utilized to dish out diced cut
tomatoes; upon completion of the portioning of the tomatoes, the
single service article referred to was disposed of as is customarily the
case; we do not reuse single service articles.
The valve for the hot water at that location was turned on
immediately.
- The backflow valve that was removed by someone was reinstalled
imm ediately.
Any obstructions were immediately removed and staff was instructed
to halt the creation of any future obstructions.
The lid was immediately placed on the garbage can in the ladies
room.
A work order was placed for the replacement of missing floor tiles
and the repair was clone within three days of inspection.

'The cook's department was actively engaged in cooking 120 sheet
pans of chicken parts; the pans are drained of the chicken fat as they
are removed from the oven which frequently causes splattering of
the grease on the floor; we are careful to minimize this and a
thorough cleaning of the floor occurs at t1ae completion of the
cooking process, therefore any acctunulation of grease is only
temporary and is eliminated shortly after the cooking is done.
At the end of the same workday, staff thoroughly cleaned all of the
walls in the dishwashing area.
- Due to a recent power surge, the light fixture had burned out; the
ballast and bulbs were replaced and. in working order within one day
Of inspection.
